Peanut butter and chocolate... obviously a classic combination. I am a huge fan of the buckeye candies (are they really candies? treats?) several of my friends make every year at Christmas. They are peanut butter balls dipped most of the way in chocolate, typically leaving a bit at the top open to resemble the nuts that grow on buckeye trees in Ohio. However, as I have previously noted, I *hate* dipping stuff in chocolate and it is not my expertise. Enter... the peanut butter buckeye brownie. These are SO good! A fudgy brownie layered with a soft, ever so slightly salted peanut butter filling, then topped with a soft chocolate-peanut butter glaze that firms up in the fridge. They are peanut buttery and chocolatey through and through and so incredibly rich. The recipe makes a 9x13" pan, and you can cut at least 50-60 brownies or really, even more. Just a couple of bites are satisfying and sweet. They are not super beautiful (though, to me, the sight of peanut butter and chocolate is quite attractive), but if I were going for a more uniform look, I'd bake them in a pan with squared off edges, lined with parchment or tinfoil (which is what the recipe calls for) so I could lift them out and cut them more evenly.
