leon's birthday cake

A client recently asked me to make a cake for an 80th birthday party. The honoree apparently isn't a big sweets-eater, but likes chocolate, and they wanted a simple, square cake to feed 30 people. I made a 3-layer, 10" square, chocolate/chocolate cake. I decorated it with a little bit of piped frosting and chocolate ganache.




Remember how I described my go-to chocolate frosting recipe, which requires beating all the ingredients together, and then beating the frosting over ice water? I've always loved the ribbon effect you get when the beaters run through it. You can see how dark the frosting originally was by how dark the edges were. It lightens in color quite a lot as you beat it. Mmm...
