cherry pie: deeelicious

It came out great. Very different from a canned filling. The cherries were rich and succulent. The crust was great, and I continue to like the crunch of the demerara sugar. In baking, the filling firmed up so when I cut into it, it didn't run or ooze, but it wasn't at all gelatinous. This morning, after a night on the counter, the filling was just a little runnier.

Overall, totally delicious, a definite success, and probably worth some freezer space to preserve some cherries for the winter!
