My college roommate, Lorin, has three kids - a daughter who's about to turn 8 and twins who will be 6 (I think?) later this fall. She's a great mom and a great cook, even if she did once have a dream I'd profaned her famous sugar cookies by adding chocolate chips. So when she sent me this recipe and said the kids liked it, and it was super-easy, and it contained vegetables, I knew I had to try it.
Spinach Turkey Meatballs
10 ounces frozen chopped spinach
1 pound ground turkey
1 egg (beaten)
1 cup soft bread crumbs
2 tablespoons grated onion
1 teaspoon seasoned salt
Mix all ingredients & shape into 2” balls. Bake, uncovered, at 400F for 20 minutes. Makes about 18 meatballs.
[Note: I just had regular dry, Italian-style bread crumbs, so I used those and omitted the seasoned salt. Also, I was too lazy to grate onion, so I left that out. Sue me.]
Could that be any easier? I made them tonight, planning to give them to the kids with pasta tomorrow and put the rest in the freezer to pull out and heat up any night of the week. (Love having a freezer stocked that way.) They were delicious, I tell ya! Really tender, because of the bread crumbs, and you truly couldn't taste the spinach. (For my part, I love spinach, but my kids automatically reject anything with "salad" in it.) I'm still not sure whether I can get the green stuff by them, but maybe I'll read Green Eggs & Ham to them at dinner. Keep your fingers crossed they're willing to try them... if they do, I'm certain they'll like them!

I will try this, fo' schizzle.
I used almost 1.5 lbs of 99% fat free ground turkey - and used a 1/8 cup measure to portion it out. I ended up with 26 meatballs.
Thumbs up all around.....
